This is the love child of all my favourite food coming together to create the most devastatingly moreish dish. Farfalle pasta, parmesan and bacon. It is quick and easy perfect for us Mums or for those looking for something filling for lunch in the sun with a chilled glass of rosé.
I have only recently become a pasta eater, I know it is shocking. Since making this dish I have cooked it almost every week, and each time I look forward to it more and more.
Known to Pollyanna as the butterfly dinner. Kids will love this just as much as us.
To serve you will need;
Based on two adults
Farfalle pasta
160g of lardons
200ml double cream
100g grated parmesan (I tend to be generous with this maybe adding a little more for real thick sauce)
Peas
Lots of fresh black pepper
Put on a pan of salted water to boil. When the water is boiling place the pasta into the pan. I put around two handfuls of pasta per person.
Set a timer for 12 minutes.
Meanwhile, add your pancetta to a dry pan on medium heat.
When the timer has 3 minutes left add your peas to the pan of pasta.
Once the timer is almost up, bring the heat all the way down to a really low temp and pour in the cream.
Add your parmesan.
An unbelievably generous amount of pepper.
Stir until everything has melted together.
Drain your pasta and peas and add to the pan of creamy sauce.
Give the pasta a good stir, making sure you coat each piece with a silky coat of cheesy, creamy goodness.
Serve up onto plates that have been heated for a minute.
Alongside a chilled glass of Whispering Angel (or rosé of your choice).
Add another dose of pepper, and have some extra parmesan on the side if your feeling really naughty.
This dish is best for any time. It is so good you will want it again and again.
Just promise to make sure you get a piece of everything on every mouthful.
